The Urban Butchery Channel is very excited about this video. It gives you a real insight into how a professional butcher works.

All meat is great to work with and demonstrate for you on this channel, but the butchering of beef is not likely to be something you will see every day. Being that Beef is both expensive and (let’s face it) very large.

Franco breaks the Hind Quarter of Beef into primals and explains thoroughly the processes used in preparing this huge cut of meat. There are a few different skills on show, plus a wealth of tips and advice from the seasoned butcher.
