Here we have a real time instructional video, demonstrating how to butcher a full half of a pig. As you can imagine, there is a large amount of fantastic meat that we can utilise from this beautiful animal and none of it goes to waste.
Franco starts by breaking the pig down into primals, then he demonstrates a few different techniques to produce some wonderful joints ready for the customer.
